ice cream for breakfast day aka our first pop up (recap)🍦
mornings are just better with ice cream, am I right?
Last weekend, we did our first public pop up! We partnered with Bartleby’s Ice Cream in North Center, Chicago for National Ice Cream for Breakfast Day. Throughout our time recipe testing, business forming, license getting, etc. one of our dreams for Morning Jay’s was to see our products sold at local small businesses. The thought of selling our homemade breakfast offerings to new faces was incredibly exciting. It was a dream that felt impossible, but Bartleby’s took a chance on us!
For this pop up, we were just selling a couple of our baked good items, which included:
🥐 Cinnamon Roll Scones turned into warm ice cream sandwiches
~ and, we introduced a new cookie to the mix ~
🍪 Maple Sourdough French Toast Snickerdoodles served a la mode.
Plus, in honor of the holiday, Bartleby’s unveiled their new flavor: Salted Maple Chocolate Bacon. They make it by blending Grade A Wisconsin syrup into their homemade ice cream base with a healthy pinch of salt to balance the sugar. Then they roast slices of hickory-smoked bacon to crispy perfection, coat them in dark chocolate, and mix them into the maple ice cream. This flavor checks all the boxes for sweet, salty, creamy, and crunchy. Seriously?? Insane! 😍
Prep started 24 hours before where we got to our shared kitchen space and prepped the doughs for the scones and cookies. Saturday morning greeted us bright and early as we went back to the kitchen, picked up the frozen doughs, and headed to the ice cream shop. Walking in, seeing our name on the menu was such a surreal experience.

We got straight to work portioning the cookie dough and baking off the scones. We also set up a little merch booth with all of our hand screen printed shirts, totes, hats, and more.
The shop opened up at 9:30 am and it was all systems go. We baked. We drizzled. We glazed. We did the utmost. And 4 hours later, we SOLD OUT! We couldn’t believe it and it was thanks to everyone who came out and supported us. To everyone who came in and bought one of our scones or cookies, you’re a real one.

Doing anything in food is so, SO much work! But getting the chance to meet really amazing food people like Rachel of Bartleby’s Ice Cream and to serve up some delicious food makes it all worth it. And, rumor has it, we are planning another pop up very soon with them! 🤫
